Chicken & Pasta

(to serve 4 people)

You will need :

4 skinless, boneless chicken breasts

1 cougette (thinly sliced)

1 orange pepper (thinly sliced)

1 onion (sliced)

Some mushrooms (or vegetables of your choice)

1 tblsp olive oil

some garlic

Seasoning

150g tub of Mascarpone cheese

Some parmesan cheese

Enough pene pasta (or pasta of your choice) for 4

How to make it in 6 easy steps            

1.Cut the chicken into smallish pieces and fry the oil with the garlic. 

2.Add the vegetables, season and fry the lot until the chicken is cooked. 

3.Meanwhile, cook the pasta. 

4.Add the tub of Mascarpone cheese to the to the chicken and vegetables and simmer until completely heated through. 

5.Drain the pasta. 

6.Add the one to the other, transfer to an over proof dish, grate the parmesan over the top and stick under the grill for 5 minutes.

Moussaka 

(to serve 4 people)

you will need:

half a cup of breadcrumbs 

1 cup cheese

3 medium aubergines

1 clove of garlic (minced)

450g minced lamb

Nutmeg to taste

2 tblsp oil

1 onion (chopped)

2tblsp chopped parsley

Salt and pepper

1 tin chopped tomatoes

half cup dry white wine.

And then for the Béchamel sauce...

40g of butter

40g plain flour

600ml milk (hot)

Salt and pepper

Pre heat oven to 180ºC/gas mark 4

1.Fry onions for 5 minutes. Add meat and cook until brown. Add  tomatoes, nutmeg, salt pepper, garlic chopped parsley and wine. Simmer for about 30 minutes.

2.Peel aubergines and cut lengthwise into thick slices. Sprinkle with salt and stand for 30 minutes. Wash in cold water and drain. Fry slightly in hot oil.

3.Put butter in a saucepan and melt slowly. Add flour and stir it until it absorbs all the butter. Add the seasonings, stirring all the time. Add hot milk very slowly while stirring until sauce becomes creamy and smooth.

4.Sprinkle some of the breadcrumbs on the bottom of a large greased baking dish. Put in one one layer of aubergines, one layer of meat mixture and repeat layers. Pour Bechamel sauce over the top layer and cover with grated cheese and the rest of the breadcrumbs. Bake for 20-25 minutes. Let it  stand for a few minutes before cutting into squares.

Rump Steak Old English

(to serve 1 person)

 

You will need:

175g rump steak

50g cream

10g watercress

25g stilton cheese

55ml Port

vegetable oil

seasoning

1.Slice a pocket into the steak and fill with stilton.

2.Pan fry and set on one side.

3.Deglaze the pan with the port and cream and reduce.

4.Pour over the steak and garnish with watercress.

Sautéed Spiced Lamb

(Serves 4 people)

You will need:

500g of Lamb fillet

50g butter

1 onion (finely chopped)

Some garlic (crushed)

half tsp ground cinnamon

2 tsp cornflour

150ml chicken

150ml soured cream 

1 tbsp fresh mint (chopped)

Seasoning

1.Cut Lamb into thin slices.

2.Fry the onion, garlic, and cinnamon in the butter until the onion softens. 

3. Add the lamb and continue to cook steadily until the lamb is colored on all sides.

4. Blend the cornflour with the stock and soured cream and add to the pan. Stir sauce until thicken it slightly.

5. Add mint and seasoning to taste and simmer gently for 8-10 minutes until the lamb is tender. 

5. Serve immediately with rice or noodles and some fresh mint to garnish.

Devilled Chicken 

(to serve 2 people)

 

You will need:

2 chicken breasts.

1 tblsp of apricot jam.

1 tblsp of French mustard.

cayenne pepper to taste

1 garlic clove (crushed)

1 tblsp Worcester sauce

1 tblsp of tomato ketchup

 

How to make it in 3 easy steps

1. Put the chicken into oven proof serving dish.

2. Mix other ingredients into and pour over chicken.

3. Cover Dish and cook at 180C/ as mark 4 for 45 minutes.
